Chuncheon | The Home of Dak Galbi

This has been a mean and petty summer. Nearly every day since  July has been blistering and it’s too hot to enjoy getting out of the apartment and brushing off the cabin fever. My school had it’s annual quick summer vacation and I took the time to go on a foodie adventure to Chuncheon, where one of my favorite Korean dishes, dak galbi, is said to have originated and pretend I was one of the castmates of my favorite Korean show, Tasty Guys. My plan was simple: eat too much and ignore the sweat beaming through my shirt. Tasty Guys is a reality eating show where 4 loveable comedians eat more food than you ever thought was humanly possible. It’s just…wow. They can really pack it in. Gus’s Fried Chicken | A Memphis Institution

There are a few places that must be on your foodie-to-do list while visiting Memphis and Gus’s Fried Chicken should be in your top 5.  Cooked in the grease that has been cultivated for 60 years, this place knows how to fry. Their sides aren’t sloppy either. Perfectly seasoned, battered, fried and cheesed, you will want to sample damn near everything on the menu. As I said previously, my trip to Memphis was short but I managed to eat some amazing food. Gus’s was indeed a highlight. Washed down my heavy meal with a cold, crisp Tennessee ale. The Ghost River Golden is not on the menu but you can ask for it. This is the “vegetarian” platter.  I know. It’s hilariously named but it’s the perfect way to order a bunch of amazing sides. Roast | Chicken

I never thought to brine anything. I often don’t want to add an extra step to what should be terribly easy, like a roasted chicken.  But, it was Thanksgiving and turkeys in this country can run about $80 and you can absolutely forget about finding an organic turkey.  So I thought that I’d treat my little non-GMO, non-antibiotic chickens with some respect. I brined the little guys and the meat simply fell right off the bone after roasting. This chicken was ahhmazing. So if you are looking to make your chicken a bit more special, think about a simple brine. You only have to plan ahead overnight. And, if you’re like me, that’s about as far in advance as I can think about dinner. Also of note, I don’t have a roasting pan so I used onions to prop up the birds. The drippings make the most unbelievable gravy if you so choose. I served the onions on the side with the chicken. Ingredients:  2 (2-3 pound) whole chickens. California | DakGalbi

I have sung the high praises of dakgalbi before here. I absolutely love this meal, as do many of my co-expats here in Korea. I upped the game on this one, as you do, with a bit of cooling avocado and crunchy pumpkin seeds to pair with the spicy love of the dakgalbi sauce. The only change I would make is this: In the restaurant you start eating the meal (its cooked in front of you on the table) as soon as the chicken is ready. That way, the chicken is perfect and it allows the veggies to continue to cook to softness. Unfortunately, I didn’t think of that and should have adjusted for the time it takes to cook the veggies. I’m going to change the directions just a bit from how I cooked it so that your chicken and vegetables will be cooked well. The World’s Most Perfect Dish? I realize I’m prone to exaggeration but this is possibly the world’s most perfect dish. Spicy chicken and vegetables cooked on fire & brimstone right in front of you. It’s a mix of divine intervention and …. chicken. It’s other worldly. Has this convinced you to go ahead and eat this masterpiece? I hope so. Basically, eating dak galbi should be on your bucket list in and outside of Korea. Just find a way to get your hands on it. The other best thingz about dak galbi is that you can find it just about anywhere in Korea, you  can share it with a ton of people, add so many different things (ramen, cheese rice cakes, cheese, seafood, etc…) and it is quite an inexpensive meal. A basic dish will cost you around 18,000 to 20,000 won for two people. Take that, pizza! (Just kidding, pizza, you know I ❤ you.) After you eat most of your meal you can ask for some rice (bokkeumbap) and they will fry it up with the …

Chicken + Orzo

  The flavor of the chicken is most certainly the reason to eat this dish. The reason to cook it is its “toss it in the oven and wash all your dishes before its time to eat” convenience. But, I liked it because I also got to use some of my fresh rosemary from my mini-garden and I just love to cut off bits of herbs like a real adult.  I ate this dish several times before it was gone as it made about 3 servings. Loves it! Ingredient List: 1/2 whole organic chicken, cut up in pieces 1 cup of whole wheat orzo 2-3 large asparagus, cut up 1 cup of veggie stock 1 small yellow onion, diced 2 cloves of garlic, minced olive oil to fry chicken salt + pepper to taste 2-3 sprigs of rosemary leaves, chopped Directions: Heat a large pan to a high heat, add olive oil. Rainy Day Picnic

I didn’t plan for a rainy day. In fact, yesterday was beautiful. Shining sun. Breezy. Perfect. Today I woke up to prepare for a picnic by the Han River. I was so excited, it doesn’t take much for me to get excited. But, looking outside I knew it was going to be cold. Cold and rainy. No sun, no breeze. Shit. We persevered and went on the picnic anyway. We found a table under a bridge and ate our lunch. It wasn’t perfect but it was peaceful. There’s always next weekend.   Chicken Recipe Kimbap Recipe
