Crispy Potato Roast

I haven’t made a Martha recipe in a long time but I had a bag of potatoes in my cabinet that were growing more ears than I care to talk about. Nightmares. They needed to be used quickly and I didn’t have the patience for a bunch of baked potatoes, however delicious they are. So I scoured my Pinterest board and found this puppy staring back at me. It’s a bit of cutting and I sliced them by hand, which is why mine are larger than the original. I couldn’t be bothered to find my mandolin. Lazy. I also left the skin on because, I’m sorry, that’s the best part. Why was it cut off in the beginning??  I don’t understand. Crispy potato skin is the stuff of heaven. Click for the recipe!

Seafood | Pajeon | 파전

  Before the onslaught of Western dishes known collectively as Thanksgiving arrive to my blog, I thought I’d share a tasty Korean recipe from a very sleek cookbook. Bibigo is a huge company in Korea and it prides itself as making healthy and fresh food.  I was gifted a cookbook from this company and I really love the look of many of the recipes. This is the pajeon recipe that I started with.  It is a pretty easy little dish and I only messed up one part, but it didn’t really affect the taste. I’ll share that in the directions.  Happy Korean Eating! Ingredients 1 ounce of small, cleaned shrimp 3 ounces of squid, cleaned, gutted and sliced into pieces (I bought mine pre-cleaned and sliced) 2 ounces of green onion, cleaned and cut in long pieces 1 egg cooking oil soy sauce 1 ounce AP flour 1 Tbsp potato starch 2 ounces of water 1 Tbsp of Korean red pepper flakes Directions Whisk egg in bowl with a pinch of salt. Lemon + Parmesan Fries

Ingredients: 1 large potato olive oil 1/2 cup of Parmesan cheese 1 teaspoon chili powder 1 teaspoon salt 1 teaspoon pepper juice of 1/2 a lemon Directions:  Preheat oven to 450 F. Cut potatoes and rinse in cold water. Dry. Once dried sprinkle with olive oil and then lemon juice. Mix together the chili powder, Parmesan, salt + pepper in a bowl.  Add fries and roll around until coated.  Add to a baking sheet with baking paper. Bake for 20 minutes then turn and add a few more sprinkles of Parmesan. Bake for another 20-30 minutes or until crispy.
