Happy Birthday, Une Peach!

Just like in real life, my birthday wish is a bit belated for Une Peach. 🙂 In April I passed a year since my first post on this blog. It’s been a fun year as I continue to try and find the right voice and the right posts for it and I have loved thinking about how I want it to evolve. It’s like a living thing sometimes. The next year I will really be working towards weekly posts and more “lifestyle” and less “total food glutton.” But, ironically or not, this post will continue my total food glutton routine as I celebrated the year with a baby Nutella crepe cake! Want to make one? It’s pretty adorable.

Kimchi | Nachos

Kimchi nachos are a thing and they are really dynamite. KA-BOOM. The totally cook a rific thing about these is that you can dress them up just like any other nachos: to your preference. Mine were vegetarian but you can add meat or your own cheese. One thing you do want to do, however, when heating the ingredients up all together, is do use an oven, not a microwave. I’m not quite sure how good kimchi would be in the microwave and what on earth it would smell like afterwards. (Your microwave, I mean.) Plus, it gives the chips a bit more crisp, rather than sogginess.

Harvest Slaw

I needed something acidic to break up the cream and fat of Thanksgiving and this slaw is perfect for that. It’s sweet and tangy and hits all the right spots. Perfect for parties, large crowds, special dinners with friends… you name it. Plus its beautiful and I LOVE to eat some beautiful food. If you are not serving it the same day you don’t need to do step two, sitting overnight in the vinegar will take the sting out of the garlic. Just pop it in a tightly sealed plastic bag, put it in the fridge and dress the salad the next day like me. I also sprinkled lemon juice over the cut apples so they wouldn’t brown. Ingredients: 3 Tablespoons of olive oil 2 garlic cloves, minced 1/4 cup red wine vinegar 1 tablespoon maple syrup salt + pepper to taste 4 cups of shredded red cabbage (I added some green too) 1 large red apple, sliced thin 1/2 cup dried cranberries 2 tablespoons (or more) of cilantro Directions: Add your olive oil, garlic, red …
