Fried Tofu Sandwich | with Ssamjang Mayo

After a weekend trip to Decadentville via Ryunique, I decided I better eat cheap last week and had one of these little scrumptious babies nearly every day. They are so good, you all, and it has been a long journey to tofu meals for me. I used to vehemently hate tofu, even after coming to Korea. I didn’t appreciate the texture, I would compare it to the fatty part of a chicken, and hated when people told me it could, “taste like whatever you cook it with.” Umm…gross.

Homemade Spinach Tortillas

Yeah. It’s not so hard. That’s the main thought I had while concocting this kitchen experiment. It is just a few main ingredients, some optional add ins for flavor and there you have it, your own spinach tortillas that are not infused with chemicals and preservatives (same same). And, dare I say it, they are so much better. Like so much better, you guys.

Roasted Tomato Soup

Nothing could be easier to make on a cold, cold winter’s night. If you have a few fingers, an oven and a blender, you will have this flavorful soup in under an hour. It took me longer, of course, because I have the world’s tiniest oven.But it was worth it. This is not your Campbell’s soup. It’s chunky and packed with delicious smells of garlic and rosemary. I’m going to keep this short because, its reflective of the soup. ūüėÄ

Zucchini Goat Cheese Rolls + Mushroom Pasta

Umm…I think I mentioned that I found goat cheese heaven in Korea, right? ¬†Oh yeah. I did. It’s right HERE! I could not wait to use this in something other than shoving my knife into the tub and scooping it out for knife-directly-to-mouth type of maneuver. Enter: Zucchini. ¬†I stuffed the zucchini with goat cheese and a makeshift black olive tapenade, baked it in the oven and then shoved it into my mouth. Much better. Maybe. It’s pretty good on its own. Hehe. I also tried something that I’ve been thinking about since I reviewed Jungsik; an upscale restaurant in Gangnam. They had a delectable lamb dish that included fried soft rice cakes (ddeok). It was just as wonderful as I remembered. If rice cakes weren’t so processed and unhealthy, I may just eat the rice cakes and goat cheese until I am sick. Whole Wheat Orzo + Roasted Vegetables

  This is a perfect Meatless Monday dinner. There are tons of vegetables, some healthy carbs and a bit of¬†protein. But, I would also say that this would taste great as a side dish. It’s a star or a supporting actor. Your choice! Ingredients: 1 cup of whole wheat orzo 1 cup of mushrooms ( used Korean oyster mushrooms ) 1/2 a head of cauliflower cut up in pieces 4 bunches of baby bok choy 2-3 green onions, cut in half 2 sprigs of rosemary 1/2 cup of balsamic vinegar salt + pepper to taste extra virgin olive oil for taste handful of slivered almonds Directions: 1. Place your cauliflower and mushrooms on one baking tray¬†and your bok choy (whole) on another baking tray. |If you have a big enough tray/oven just do it on one.| ¬†Coat with some olive oil, salt + pepper and fresh rosemary, chopped. Summer Fruits |Salad|

¬†I¬†got a beautiful bunch of some summertime fruits from a friend and needed to eat them up quickly. A salad is a rock solid¬†way to throw them all together and eat them while feeling good about your dinner. ¬†The star of this show was the freak¬†on the outside-beauty¬†on the inside dragon fruit. This fruit has a lovely, mild taste and is a bit like a kiwi in texture. It combined like a champ with the other fruits. To eat you just cut off the crazy green outside with a pairing knife. After you cut up the fruit, the fuschia skin simply peels off. It’s all much easier than it looks. I had this salad with a little roasted duck on the side but on its own is also incredibly flavorful. I just love my proteins.
